* Tofu, extra firm, 1.0 block
* Water, tap, 44 fl oz
* Mixed Vegetables, frozen, 1 package (10 oz)
* Vegetable Broth, 6 cup
* Onions, raw, .25 cup, chopped
Mix all ingredients in large pot and bring to boil.
Reduce to simmer and cook until rice is soft.
