Ingredients

    5 oz boneless, skinless chicken breast
    1/2 c wild rice
    1 c arugula, fresh
    1c spinach, fresh
    3/4 can cream of mushroom soup
    1/4 c roasted red pepper
    1/2 large onion
    2 tbsp olive oil

Directions

chop onions & saute, chop spinach & arugula & sweat for a few minutes, cut chicken into bite sized pieces & saute to almost done, Cook rice for 40 minutes & let stand for 10...cut roasted red peppers into pieces...combine all cooked ingredents with mushroom soup...pour into casserole dish & bake for 40 min at 400
