Cornbread Waffles

Cornbread Waffles

Ingredients

    1 cup Cornmeal
    1 cup flour
    4 tsp baking powder
    1/4 cup sugar
    1 tsp salt
    2 eggs
    1 cup milk
    1/4 cup canola oil

Directions

Sift flour with sugar, baking powder and salt; stir in cornmeal. Beat eggs slightly, add milk and oil. Combine with dry ingredients, stirring only until moist. Pour batter onto warm waffle griddle. Cook each set until it is golden brown or as your waffle iron instructs.

  • I love these waffles! I made them in a belgium waffle iron and got 4 huge waffles from the recipe. They are nice and crispy and I love the texture from the cornmeal. Thank you! - 4/21/13

  • I will confess to adding dried cranberries to the batter, and Splenda Granulated instead of sugar, but it came out so good, I ate it plain. A great recipe, I will definitively make it again, maybe with some jalapenos and have it with chili, like PAULLINLIM did. Thank you for sharing this. - 2/14/12
