Number of Servings: 24

Ingredients

    2 1/2 C sweetened cinnamon applesauce
    2 2/3 C water
    1 tsp. salt
    1 Tbl. vanilla
    5T coconut oil (melted, if necessary)
    1 packet monk-fruit sweetener

    5C dry rolled oats

Tips

I used homemade sweetened cinnamon applesauce here! Mashed bananas can be used, but the nutritional info will be different. Other spices can be stirred in as well!


Directions

Heat oven to 350.

Line 24 muffin tins with paper liners. (I have not tried just spraying them)

Mix together all ingredients except oats with a whisk, then stir in oats.

Measure 1/3 C into each muffin cup.

Bake 20-25 minutes.

Serving Size: Makes 24 cupcakes
