Russian Tea Cakes

Introduction

Number of Servings: 25

Ingredients

    1 cup + 2 Tbsps all-purpose flour (brown rice flour for gluten-free cookies)
    1/2 cup butter
    1/2 cup powdered sugar
    6 Tbsps chopped walnuts
    1/2 tsp vanilla
    Dash of salt

Tips

Rolling the cookies in powdered sugar again when completely cooled will make them look prettier and taste sweeter. Extra powdered sugar not tracked.


Directions

Preheat oven to 400.
Mix together butter, 1/4 cup powdered sugar, and vanilla
Slowly mix in flour, walnuts, and salt. Beat well.
Shape into 1-inch balls.
Place on ungreased cookie sheet, 1" apart.
Bake 10 minutes, until set but not brown.
Roll warm cookies in remaining powdered sugar.
Set on wax paper to cook completely.

Serving Size: Makes 25 cookies; serving size = 1 cookie
