Introduction

Number of Servings: 6

Ingredients

    2 tbsp Balsamic Vinegar,
    1 tsp Dijon Mustard,
    1/2 tsp Salt,
    3 tbsp Olive Oil
    1/2 c frozenYellow Sweet Corn, thawed
    1 cup Edamame, Shelled, Frozen, thawed
    2 cups Black Beans
    2 Scallions, sliced
    1 red bell pepper, chopped
    2 tbsp Parsley, chopped
    2 tbsp Basil, chopped
    2 cup Spinach, torn
    2 cup Romaine Lettuce, torn
    2 cup Kale, torn

Directions

1. If using canned black beans, rinse

2. Whisk together the vinegar, olive oil, mustard, and salt

3. Mix together the beans, corn, scallions, parsley, and basil

4. Add dressing to bean mixture and mix well

5. Serve over greens
