Potato Crust & Ham Quiche

Ingredients

    Crust:
    3 cups cubed, frozen hash browns
    1 egg lightly beaten
    3/4 cup flour
    onion salt and pepper to taste

    Filling:
    3 oz. shredded part-skim mozzarella cheese
    6 oz. lean ham, cubed or chopped
    3 eggs, lightly beaten
    1 cup fat free milk
    onion salt & pepper
    dash of paprika

Directions

In a bowl, combine crust ingredients; press into a pie plate that has been sprayed with non-stick spray. Bake at 400 for 20 minutes.

Remove from oven; reduce heat to 350. Top the crust with 2 oz. of cheese and ham. In a bowl, whisk together eggs, milk, salt & pepper. Pour over crust. Sprinkle with paprika. Bake at 350 for 35-40 minutes or until knife inserted near center comes out clean.

Sprinkle with remaining 1 oz. of cheese and allow to sit 5 minutes before serving.

Serving Size: Makes 4 large pieces
