Bircher Muesli with exotic fruit

Ingredients



    Pineapple, fresh, 80 grams chopped small
    Porridge oats with rolled oat flakes 25g
    Apple juice, unsweetened, 50 mL
    Apricots, dried, 10 grams chopped small
    Apple, fresh 50g grated
    Fat free greek yoghurt 150ml
    Honey, 1 dsp
    Mango - Fresh, 25g
    Kiwi - fresh, 75g

Tips

Best if chilled overnight first in the fridge.


Directions

Put chopped pineapple in the bottom of a 250ml ramekin.
Mix oats, juice,apricots, yoghurt and grated apple together and spoon over the pineapple.
Cover with clingfilm and chill in the fridge - overnight if possible.

To serve - run a knife round the ramekin, turn out onto a plate. spoon the honey on top and serve with sliced mango and kiwi.
