Raspberry Muffins with Lemon Glaze

    *Egg white, 2 serving
    Granulated Sugar, .5 cup
    *Heart Smart Bisquick (mix only), 2 cup
    Buttermilk, lowfat, 2/3 cup
    Apple juice, unsweetened, 1/3 cup
    All-Bran Cereal, 0.5 cup
    Vanilla Extract, 1 tsp
    Raspberries frozen unsweetened , 1 2 /3 cup
    Lemon Peel grated, 1 tsp
    Powdered Sugar, .5 cup, unsifted
    Lemon juice, 1 tsp


Preheat oven to 400F. Spray muffin pan. At medium speed beat egg whites til fluffy. Beat in sugar til glossy. Beat in the next 5 ingredients. Fold in raspberries and lemon zest. Divide batter between 12 muffin cups. Bake 25 minutes or until toothpick inserted in middle comes out clean. Cool 5 minutes. Remove from pan and cool. Mix powdered sugar and lemon juice until smooth. Drizzle over muffins. Makes 12 muffins.
