Anytime Vegetable Soup (The Doctor's Diet - 8.8 NET Carbs/serving)

Ingredients

    1/2 cup chopped onions
    1 small garlic clove, chopped
    1 cup celery, chopped
    1 cup red cabbage, chopped
    1 cup carrots, chopped
    32 ounces of beef broth
    15 ounce can of tomato sauce
    Dash of black pepper
    Parsley to taste

Tips

You can freeze this for later!!


Directions

Spray a saucepan with cooking spray. Saute the vegetables until they soften. Add broth, tomato sauce, and herbs and bring to a boil. Reduce heat and let simmer for 20-30 minutes.

Serving Size: Makes (6) 1 cup servings
