Roasted Pork chili

Introduction

Number of Servings: 8

Ingredients

    2 cups hot water
    4 dried ancho peppers
    16 oz chicken broth
    6 cloves garlic
    3T chili powder
    2T cumin seed
    1 lb pork tenderloin or roast
    non stick cooking spray
    1 cup red bell pepper, chopped
    1 cup onion, chopped
    16oz kidney beans
    16oz stewed tomatoes
    16oz chicken broth

Directions

Deseed and break up dried ancho peppers. Soak in hot water 10 minutes until softened.
Combine chicken broth, garlic, chili powder, cumin seed, peppers and liquid in blender. Process until it is liquified.
Slice or cube pork. Spray with non stick cooking spray. Sprinkle with salt/pepper and brown before putting into the crock pot. Pour sauce over pork and cook 3-4 hours on high or 6-8 hours on low. (It can be left on overnight or all day while you're at work.)
Pork will be super tender! Shred before adding other ingredients.
Spray onions and peppers with non stick cooking spray. Cook until softened. Add pork, beans, tomatoes, and chicken broth. Heat through.
Alternative: This can be cooked on the stove top in a dutch oven for 3 hours until tender.
If you haven't used dried peppers before, they are a great way to add tons of flavor and 0 calories!
