Wonderland Pancakes

Introduction

Homemade Pancakes Homemade Pancakes
Number of Servings: 12

Ingredients

    2 tsp baking powder
    1 c flour
    1/4 tsp salt
    1 egg, beaten
    2 C soymilk (or 1 cup 1% cows milk)
    1 Tbsp oil

Directions

Sift dry ingredients. Mix beaten egg, milk, then oil. Stir inot dry ingredients. Pour onto hot griddle. Makes about 12 pancakes 3-4" each. I top mine with a fresh fruit salad by throwing whatever fruit I have on hand (pears, apples, bananas, strawberries, grapes, etc) in a bowl and tossing with lowfat yogurt. About 1/2 cup of fruit salad is good for 2 pancakes.

**Note: The original recipe calls for cows milk. We use soymilk and so I've had to add extra there. Even so, the batter does seem to thicken up a bit towards the end, and I do add a few tablespoons more. I don't know if this is the case with cows milk, I've never used it. But I do know that you do have to about double the amount of milk when using soymilk.
