Peanut Chicken Stir-Fry

Ingredients

    2 tsp. cornstarch
    3/4 cup Swanson's 99% fat-free chicken broth
    1/4 cup Jif Reduced-Fat peanut butter
    3 Tbl. Kikkoman lite soy sauce
    1 tsp. ground ginger
    1/4 tsp. pepper
    1 1/4 lbs. boneless skinless chicken breast, cut into strips
    1 cup chopped onion
    1 cup thinly sliced green pepper
    1 cup thinly sliced red pepper
    1 1/2 cups sliced fresh mushrooms
    1 tsp. minced garlic

Directions

In a small bowl, combine the first six ingredients until smooth; set aside.

In a large skillet or wok coated with pan spray, stir-fry chicken for 3-4 minutes or until no longer pink. Remove with a slotted spoon and keep warm.

Coat pan with pan spray; stir-fry onion and peppers for 3 minutes. Add mushrooms and garlic; stir-fry 3-4 minutes longer or until vegetables are crisp-tender.

Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve over brown rice.

Serving size: approximately 1 1/2 cups of stir-fry

  • Overall not a bad recipe at all...I used differant veggies (red pepper, brocolli and water chestnuts). I also added a little bit of red pepper flakes and lime juice for taste, but overall pretty yummy! - 11/17/08
