Mediterranean Soup

Ingredients

    8 cups health valley chicken broth
    4 cups canned diced tomatoes
    4 cups cooked or canned chickpeas
    8 oz canned chicken breast, shredded
    8 cups raw spinach
    1 tbsp lemon pepper (or to taste)
    2 cloves minced garlic (or to taste)

Directions

Add all ingredients to a large stockpot and simmer until everything is well heated and the spinach is wilted. Season with salt and parsley if desired.
