Chicken in a Creamy Mushroom Sauce

Ingredients

    6 oz. Barilla Plus Angel Hair pasta
    3 cups Mushrooms, fresh,pieces or slices
    1 medium Onions, chopped
    1 Tbsp Margarine (I use Brummel & Brown, Original Spread made with Yogurt)
    1 Tbsp Extra Virgin Olive Oil
    3 oz. Philadelphia Light cream cheese
    2 tsp Salt (more or less to taste)
    1 tsp Pepper, black (more or less to taste)
    1 clove Garlic, minced
    1/4 cup Skim Milk
    3 Chicken Breasts, boneless and skinless

Directions

Add olive oil, onion, garlic, dash of salt and pinch of pepper to a skillet and turn heat on stove to medium high. Place chicken in pan and sauté until chicken is half way cooked.
Add the mushrooms and margarine to the pan and toss mushrooms with the chicken and onions until tender and chicken is thoroughly cooked.
Cut up cream cheese into chunks and add to pan, stirring into sauce until melted.
Add milk and let simmer for a couple minutes more until sauce thickens a little bit. Serve over pasta. Makes three generous portions.

To cut back on calories, substitute fat free for the light cream cheese and omit the Extra Virgin olive oil in exchange for margarine. Depending on how thick/thin you like your sauce, milk may not be necessary.
