Jazzed up Brown Rice

Introduction

Rice and beans Rice and beans
Number of Servings: 6

Ingredients

    Brown Rice, 1 cup
    Dice tomatoes, 1 can
    Black beans, 1 can
    green pepper, 1/2cup chopped
    garlic clove, minced
    olive oil, 1 T
    cilantro, fresh 1/4 cup chopped
    low fat cheddar cheese
    green onions, sliced

Directions

Prepare rice. Drizzle olive oil in pan. Add garlic and green pepper. Saute lightly. Add tomatoes. Add beans (drained and rinsed). Stir in rice. Heat through. Add cilantro. Garnish with cheese and green onions.
