Ingredients

    2 packages Vigo yellow rice
    4-6 chicken quarters
    2 cans green peas - drained

Directions

Boil chicken quarters until done, pull chicken out and set liquid aside. Let chicken cool and pull off skin and bones, shreading chicken into smaller pieces.
Measure 2 and 3/4 cup of the chicken broth into the pot, boil. Add in chicken, peas and rice.
Cook according to rice package until rice is tender.
