Rainbow Vegetable Couscous

Introduction

I make a batch of this and it lasts me all week for work lunches. I make a batch of this and it lasts me all week for work lunches.
Number of Servings: 4

Ingredients

    1 cup uncooked whole wheat couscous
    1/2 cup chopped red onion
    1/2 cup chopped mushrooms (your choice of flavor)
    1 cup grape tomatoes, chopped
    1/4 cup sliced raw carrots
    1/2 cup chopped English cucumbers
    1 ounce Feta cheese
    8 tablespoons (or to taste) Ken's Sundried Tomato Vinegrette

Directions

Cook couscous according to package directions

After couscous has cooled, add vegetables and mix well. Add dressing to taste and mix well. Refrigerate.

Feel free to add any of your favorite veggies
