Linguine alla Carbonara

Ingredients

    1 T extra-virgin olive oil
    1 med yellow onion, minced
    2 spinach asiago chicken sausage (or chicken, or omit)
    4 ounces pancetta or prosciutto, diced
    1 pound fresh linguine
    3 large egg yolks, at room temperature
    6oz. nonfat greek yogurt
    1/2 c finely grated Parmigiano-Reggiano
    Freshly ground black pepper

Directions

Saute prosciutto or pancetta to render out some of the fat. Add the minced onion, and olive oil. Saute a few minutes, then add spinach and chopped sausage (or chicken). Cook until onions are translucent, and meat is cooked.

Bring water to boil and cook pasta to directions. Meanwhile, whisk egg yolks and yogurt until smooth. When pasta is done, drain, reserving a small amount of the water. Return pasta to pot over low heat, and mix the egg mixture and Parmesan over the hot pasta. Add the pancetta mixture and toss to coat.

Serving Size: Makes 8 - 1 cup servings
