High Fiber Healthy Lunch Salad

Introduction

A healthy mix for lunch--11 gr fiber!! per serving! A healthy mix for lunch--11 gr fiber!! per serving!
Number of Servings: 8

Ingredients

    265 grams canned chick peas
    200 gr cooked bulgur wheat, cooled
    2 cups thawed frozen peas, cooked if you prefer, cooled
    1 big red pepper, chopped
    265 grams canned kidney beans
    juice of 1 or 2 melons
    1 TBLSP balsamic vinegar
    1TBSP olive oil
    250 grams cherry tomatoes
    100 grams raisins
    2 medium carrots, chopped
    3 TBLSP chopped parsley or other herbs
    salt and pepper to taste

Directions

Makes 8 servings--1.5 cups per serving.

Be sure to drain all your canned beans, thaw peas, cook and cool bulgur and chop your carrots and red pepper into small uniform pieces

Make dressing out of oil, vinegar and lemon juice, toss with all ingredients, refrigerate, or portion out into 8 1.5 cup lunch servings.
