Introduction

This is a chili recipe that I discovered when I started considering a gluten free diet. This is a chili recipe that I discovered when I started considering a gluten free diet.
Number of Servings: 8

Ingredients

    4 C yellow onions, chopped small
    4 C celery, chopped very small
    16 oz gluten free chicken or vegetable stock
    2 Tbsp chili powder
    Tbsp salt
    Tbsp cumin
    Tbsp pepper
    1 tsp cayenne or chipotle powder
    1 lb ground hamburger or buffalo
    1 Tbsp garlic
    1 can small red beans (Adzuki)
    1 can Black Beans

Tips

Ground buffalo can be substituted for the ground beef.


Directions

Combine chili powder, salt, cumin, pepper and cayenne with the chopped onions. Cook the meat, celery, garlic and onions together chopping up the meat fine as it browns. In a pot combine the stock and beans. When the meat is completely browned put it into the pot with the stock and beans. Simmer for 1 hour stirring often.
