Introduction

Ingredients

    3 Medium Russet Potatoes(Baked)
    .25 cup unsalted butter
    .25 cup flour(more or less depending on desired thickness)
    2 cups vegetable broth
    1.5 cups milk(nutrition calculated for 2%)
    2 Scallions(Chopped)
    .5 cup shredded cheese(calculated for colby jack)
    .5 cup of plain fat free greek yogurt

Directions

Melt the butter in your pot, cut up your potatoes, and mix everything but the flour(use it for thickening the soup to your tastes) in together. Let it simmer about 15 minutes on a stove top, or about 3-4 hours in a crock pot.
