Shark Vera Cruz

Ingredients

    1 1/2 lbs shark fillet (snapper is perfect, too), cut into 4-6 pieces
    1 tbsp cooking oil
    2 cloves garlic, minced
    1 large onion, cut in slices and separated into rings
    2-3 jalapeno peppers, seeded and chopped
    1/4 cup pimento stuffed olives, sliced
    1/4 cup dry white wine
    2 tbsp capers, drained
    2 cups chopped tomatoes
    bay leaf
    1/2 tsp sugar
    salt
    pepper


Directions

In large skillet, saute onion and garlic in hot oil until tender. Stir in tomatoes, jalapenos, olives, wine, capers, bay leaf, and sugar. Bring to a boil. Season fish with salt and pepper and add fillets to skillet. Return to boil. Reduce heat and cover. Cook for 10-15 minutes, or until fish flakes easily with fork. With a slotted spoon, remove fish; cover and keep warm. Bring sauce back to a boil and cook for about 5-6 minutes until it has reduced down a bit. Serve over fish.

  • This was absolutely wonderful. The flavor is delicious and all the way through. The only problem I had was the amount of time for the shark to cook because I used thresher shark and it is pretty thick, so it needed 25-30 min. Also, I doubled the recipe and I needed a much bigger sauce pan. - 4/7/08
