Savory Stuffed Peppers

Ingredients

    1 sweet red pepper, cut in half & seeded
    6 oz ground turkey
    1/2 stalk celery, chopped
    1/2 cup mushrooms, chopped
    1 clove garlic, minced
    1/2 cup chopped onion
    1 Tbsp. parsley
    1 1/2 tsp Worcestershire sauce
    1 cup peeled tomatoes (w/juice)
    2 Tbsp. shredded Parmesan cheese

Directions

Preheat oven to 350. Wash peppers, place in oiled dish and microwave for 4 minutes. Saute turkey, celery, mushrooms, garlic, onions, and parsley until turkey is cooked through. Add Worcestershire sauce and tomatoes, allow to simmer for 3-4 minutes. Stuff pepper halves with mixture and top with Parmesan cheese. Bake for 10 minutes.
