Jorge Cruise Mashed Cauliflower

Introduction

Number of Servings: 2

Ingredients

    1/2 head cauliflower (medium)
    1 Tbsb. chopped shallot
    1 clove garlic, minced
    2 Tbsp shredded Parmesan cheese, grated
    4 oz FAGE yogurt (plain)
    salt & pepper to taste
    Chives, for serving

Directions

Steam cauliflower until tender. Drain, put in food processor with shallot, garlic, Parmesan cheese, yogurt, salt & pepper. Process until combined - do not over-process. Garnish with fresh chives.
