Zucchini with Green Chiles

Introduction

Number of Servings: 12

Ingredients

    2 tablespoons oil (preferably extra virgin olive oil)

    3 large green zucchini, sliced

    2 medium yellow crookneck squash or yellow zucchini, sliced

    1 small onion, sliced

    4 garlic cloves, minced

    1 medium tomato, chopped

    (1) 7 ounce can chopped jalapenos

    1/2 teaspoon salt

    1 packet chicken bouillon powder

    1 teaspoon oregano, crushed in hand

    1 teaspoon cumin, ground

    1/2 cup cilantro, minced

Directions

Heat oil over medium high heat.

Add zucchini, squash, onion, and garlic stirring occasionally for 5 minutes or until tender.

Add tomato, chiles, salt, oregano, cumin, bouillon and cook for 1 minute or until heated through.

Thoroughly toss in cilantro.

Serve with warmed corn tortillas which are great for soaking up that tasty broth.

At least 12 servings can be had from this recipe!
