Creamy Cajun Pasta

Introduction

Super decadent and surprisingly light, great with or without chicken! Super decadent and surprisingly light, great with or without chicken!
Number of Servings: 6

Ingredients

    4 Boneless, Skinless Chicken Breasts (individually frozen half-breasts; 2 whole breasts)
    1 jar Classico Alfredo Sauce (garlic, tomato, any one will do!)
    1/2 medium onion, diced
    1 large red pepper, diced
    1 cup frozen white sweet corn
    2 tbsp cajun seasoning, separated (or more to taste)
    1 bag of shaped pasta, cooked
    1 tbsp Extra-Virgin Olive Oil

Directions

Add alfredo sauce and 1 tbsp cajun seasoning to a small saucepan and simmer on low. The longer you simmer, the more intense the cajun flavor will be, so start this first and let it simmer while you make the rest.

Add onions, red pepper and EVOO to a skillet and sauté until cooked through. Add the chicken and 1 tbsp cajun seasoning and sauté until cooked through, about 10 minutes, stirring frequently. Add frozen sweet corn and continue stirring until corn is thawed.

After simmering the sauce for +/- 20 minutes, pour directly into the skillet with the chicken and toss.

Approx. 6 1-cup servings. Serve over 1 cup of cooked pasta. Great with shrimp too; try it meatless and serve alongside blackened tilapia!
