Ingredients

    2 cups chickpeas, cooked
    2 cups cooked quinoa
    3 cups spinach, chopped
    4 limes, juiced
    2 tbs olive oil
    salt to taste
    pepper to taste
    splash of apple cider vinegar
    12 cherry tomatoes, cut in half
    2 oz Trader Joe's crumbled goat cheese

Tips

i eat this as a full meal by itself. it has all the protein, and other nutritional values of a full dinner.
