Salmon Waldorf Salad

Introduction

adapted from "Well Fed" adapted from "Well Fed"
Number of Servings: 4

Ingredients

    1 med apple, chopped (100 g)
    2 scallions, chopped (5 g)
    5 pecans, chopped (15 g)
    1/2 fillet salmon, cooked, cooled and flaked (221 g)
    2 T paleo mayo
    1/2 t dry mustard
    salt/pepper to taste

Tips

Gets better if you let it hang out in the fridge to meld.

Directions

Cook salmon until done through. Cool on a plate while preparing other ingredients.
Combine apple, onions and nuts in large bowl. Flake salmon into bowl and break up large chunks. Add mayo and dry mustard, folding to combine. Taste and add salt/pepper as needed. Serve over bed of greens, on cucumber rounds or by itself.
