red lentil & quinoa soup

Ingredients

    6 cups home made chicken stock
    1 teaspoon chopped garlic
    1/4 cup red onion
    1 stalk celery diced
    1 large carrot chopped
    1 tsp. cumin
    1 tsp. oregano
    1 tbsp. basil
    1 tsp. black pepper
    salt to taste

Directions

Sauté onions, celery & garlic in a non stick pot
add chicken stock and all other ingredient's and cover and let simmer for about 40 minutes

Serving Size: 4 - 1.50 cup servings
