Lentil With Kale Pasta Sauce

Introduction

Yummy, Low Cal, High In Folate Vegetarian Pasta Sauce. Yummy, Low Cal, High In Folate Vegetarian Pasta Sauce.
Number of Servings: 4

Ingredients

    Lentils, 1 cup
    *Onion, sweet, raw - 1 medium onion
    *Mushroom - White/raw, 1 cup
    *Herb Ox Sodium Free Instant Beef Broth Boullion, 4 serving
    Garlic powder, 1 tsp or to your preference
    *Hunt's Tomato Paste, 12 tbsp (one 6 ounce can)

Tips

During simmering times you may need to add more water. Be careful not to over add water, go by small amounts , better to have too little and add then have too much and not be able to remove some.


Directions

Boil 4 cups of water, adding the 4 packets of beef broth when the water is hot. Add the washed 1 cup of Lentils to the boiling water, at this time add the chopped kale and continue and simmer for about 30 minutes or more til the lentils are at the point where they are almost mushy. Saute` onion in a small frying pan. First simmer them for 3 minutes on medium heat, then add 1-2 table spoon(s) of EVOO ( Extra Virgin Olive Oil) , fry til browned and or soft . Add the tomato paste, onions, garlic powder , fresh pepper or any kind you preferr to the Lentils and Kale . Simmer them for about 20 minutes.
