Chicken Broccoli Rice Casserole

Ingredients

    Campbell's Healthy Request Cream of Chicken Soup, 2.5 cup (1 can)
    *Canola Oil, 1 tbsp
    Salt, 0.5 tsp
    Pepper, black, 1 tsp
    Tarragon, ground, 1 tsp
    Imagine Organic Low Sodium Chicken Broth (1 serving is 1 cup), 1.5 cup
    Broccoli, frozen, 1 package (10 oz)
    100 grams fresh broccoli
    Chicken Breast (cooked), no skin, roasted, 24 ounces
    Onions, raw, 300 grams
    Carrots, raw, 150 grams
    Celery, raw, 150 grams
    *White Rice, medium grain, 1.5 cup

Directions

Poach chicken breast in water or stock until just cooked through. Once cooked, allow to cool for 5 minutes, then shred with a fork. Set aside.

Dice onions, carrots, and celery. Sautee in canola oil and 1/4 tsp salt until softened, about 5 minutes.

In a 9 x 13 baking dish, combine chicken stock, soup, uncooked rice, cooked vegetables, tarragon, salt, pepper, and broccoli.

Cook until rice is done, checking half way through . If needed, add additional water or stock. Total cook time is approximately 45 minute.

remove from oven and allow to cook for 10 minutes prior to serving.
