Introduction

Number of Servings: 8

Ingredients

    1/2 to 1 lb beef chuck - cubed
    1 medium onion - chopped
    1 bag frozen mixed veggies
    1 bag frozen peas and carrots
    1/2 cup of fresh baby carrots
    5 small potatoes - peel & left whole
    1 pkg beef stew mix
    1 tablespoon extra virgin olive oil

Directions

Heat pressure cooker with olive oil.
Brown meat and onions.
Add beef stew mix as directed on pkg(add water)
Stir in Baby Carrots
Place WHOLE potatoes on top of mixture

Close pressure cooker & bring to high steam.
Once at High pressure, lower temp to medium & cook for 20 minutes.

While pressure cooker is cooking;
Cook all frozen veggies by boiling.

When time up for pressure cooker, drain veggies and add to meat mixture. I like to cut the potatoes to bite size pieces with a fork & knife.(cuts easily)

Simmer all mixture for a few minutes & serve.
