Sunflower Seed Bread

Ingredients


    4 cups strong wholemeal flour
    1/2 tsp easy-blend dried yeast
    1/2 tsp salt
    1/2 cup sunflower seeds, plus extra for sprinkling

Directions

Grease and lightly flour a 1-lb loaf tin. Mix together the flour, yeast, salt and sunflower seeds in a large bowl. Make a well in the center and gradually stir in 1 1/4 cups warm water. Mix vigorously with a wooden spoon to form a soft, sticky dough. The dough should be quite wet and sticky, so don't be tempted add any extra flour.
Cover the bowl with a damp dish towel and leave the dough to rise in a warm place for 45-50 minutes or until doubled in bulk.
Preheat the oven to 400. Turn out the dough onto a floured surface and knead for 10 minutes - the dough will still be quite sticky.
Form the dough into a rectangle and place in the loaf tin. Sprinkle the top with sunflower seeds. Cover with a damp dish towel and leave to rise for a further 15 minutes.
Bake for 40-45 minutes until golden - the loaf should sound hollow when tapped underneath. Leave for 5 minutes, then turn out of the tin and leave to cool on a wire rack.
