Coconut Lime Gelatin

Ingredients

    For Lime Layer
    4-1oz envelopes unflavored gelatin
    1 cup sweetened bottled lime juice(such as Rose's)
    1 cup fresh lime juice
    2 cups boiling water
    1 tsp finely grated lime zest
    2 tbsp sugar
    1-2 drops green food coloring

    For Coconut Layer
    4-1 oz envelopes unflavored gelatin
    1-15oz can of cream of coconut
    1 1/2 cups boiling water
    1/2 tsp vanilla extract

Directions

1. Mist 9x13 glass baking dish with cooking spray.
2. Make lime layer: Sprinkle 1 envelope gelatin over sweeten lime juice in a bowl. Let sit 2 min. Whisk in fresh lime juice, boiling water, and 3 envelopes gelatin stirring until gelatin is dissolved. Whisk in lime zest, sugar and food coloring. Poor into baking dish, cover and refrigerate until firm at least 3 hours.
3. Make coconut layer: Sprinkle 1 envelope gelatin over cream of coconut in a bowl. Let sit 2 min. Whisk in boiling water and 3 envelopes gelatin, stir until gelatin is dissolved. Add vannilla extract. Let cool slightly. Pour coconut mixture over set lime layer. Cover and refrigerate until firm about 3 hours.
4. Run a knife around edges of baking dish. Put a large cutting board on top of dish and flip to invert onto cutting board. Cut dessert in half and stack 1 half evenly onto other half. refrigerate until ready to serve. Cut into 8 or more squares.
