Chicken in tomato sauce

Number of Servings: 4

Ingredients

    2 tsp olive oil
    1 cup chopped onion
    2 cloves garlic
    1 can diced tomatoes, 15 to 16 ounces
    1 can tomato paste, 6 ounces
    1-2 tsp mixed dried herbs, such as oregano, basil and marjoram.
    3 pre-cooked (poached) chicken thighs, chopped.

Directions

Saute the onion in the olive oil until glassy. Add the minced garlic and saute another minute. Add the tomatoes and tomato paste and bring to a simmer. Add the dried herbs. After simmering 10 minutes or more, add the chopped chicken and heat through. Serve with brown rice and steamed vegetables.
