Super Simple Scampi

Introduction

A wonderful dish that takes just minutes to prepare. Serve with whole wheat pasta and a salad for a complete meal. A wonderful dish that takes just minutes to prepare. Serve with whole wheat pasta and a salad for a complete meal.

Ingredients

    1 tbs extra virgin olive oil
    4 cloves of garlic, minced
    10 oz raw frozen shrimp
    1 can petite diced tomatoes, drained
    1 tsp old bay seasoning (optional)
    1/2 cup chopped fresh parsley

Directions

Add olive oil to a large skillet over medium heat. Add the garlic and stir into oil. Add in tomatoes and cook just until bubbly. Stir in the frozen shrimp. Cook 5-7 minutes or until thawed and they have turned pink. Sprinkle in the old bay seasoning if using. Stir in the parsley. This is delicious served over whole wheat pasta.

Makes 3- 3/4 cup servings

*You could also use pre-cooked shrimp in this to make the cooking time even shorter!
