Low Fat Vegetable Soup

Ingredients

1 medium onion, chopped
2 large stalks celery, chopped
4 cloves garlic, pressed
1 medium red bell pepper, chopped
1 medium green pepper, chopped
1 medium yellow pepper, chopped
1/2 cup tomato paste
1 cup chopped carrot
1 tbs paprika
3 tsp turmeric
1 bay leaf
1 15oz can diced tomatoes
1 large leaf of chard (1 1/2 cups), can use spinach, cut into strips
10 oz fresh green beans
salt and pepper
5 cups of Swanson 99% fat free chicken stock
1 TBS olive oil
Directions
1. In a large soup pot, put oil, onion, and celery. cook on low heat for 5-10 minutes.
2. Add garlic and turn up the heat to medium. Cook for a minute or so and add the peppers and carrots. Cook another minute or two and add the spices. Stir and cook until fragrant.
3. Add tomatoes, tomato paste and stock, simmer for 15 minutes. Add green beans and chard, simmer for another 5 minutes or until beans are cooked. If adding meat, add now.
4. adjust seasonings.
