Ingredients

    Almonds, dry roasted (salt added), 2 cup whole kernels
    Walnuts, 0.5 cup shelled (50 halves)
    Hazelnuts, 1 cup, whole
    Brazilnuts, 1 cup shelled (32 kernels)
    Pumpkin Seeds, 2 cup
    Cranberries, dried, sweetened (craisins), 1 cup
    Almond Flour - per 1/4 Cup, 8 serving
    Chia seeds - 1Tbsp=13g, 52 gram(s)
    Coconut Oil, 1.2 cup
    Honey, 1 cup
    Vanilla Essence, 10 gram
    Pumpkin Pie spice, 4 tsp

Directions

Oven to 160C. Process nuts and pumpkin seeds in food processor until all broken and different sized. Add almond flour, chia seeds and spice and stir. Melt coconut oil and honey together, add essence and add to dry ingredients in big bowl. Stir well to coat. Cook in roasting dish for 30 minutes or until golden, stirring every 10 minutes.Stir in cranberries and let cool. Break up when cool and store in airtight containers in the fridge.
