Introduction

Number of Servings: 16

Ingredients

    One large jar Roasted Red Peppers (drained)
    2 large tins diced tomatoes
    One large head Purple Cabbage, roughly chopped
    2 cloves of garlic chopped
    6 slices of bacon, diced
    1/4 purple onion, chopped
    One carton (1Litre) of low sodium beef broth
    3 Bay leaves

Tips

Great with a dollop of Sour Cream


Directions

Puree red peppers and tomatoes in blender, set aside. Chop bacon and brown in 6qt/5.7L pot. Add diced garlic and onions and cook until bacon is crispy. Add diced cabbage and saute, coating all the cabbage in the bacon grease and onions. Add pureed peppers and tomatoes, Bay Leaves and beef broth. Bring to a boil and simmer with lid on for 1 hour. Remove Bay leaves and semi-puree with hand immersion blender, leaving some whole cabbage pieces.
