Tzatziki (Homemade Greek yogurt dip)

Introduction

This is a luscious blend of yogurt, cucumber & garlic that is a great compliments to savory Greek dishes, like Keftethes (meatballs) and Gyro's. This is a luscious blend of yogurt, cucumber & garlic that is a great compliments to savory Greek dishes, like Keftethes (meatballs) and Gyro's.
Number of Servings: 10

Ingredients

    1 cup Greek-style super thick yogurt
    1/2 large cucumber, peeled, seeded and finely chopped salted lightly for 5 minutes and squeezed between the hands to remove (the long, thin, almost seedless kind)
    2 garlic cloves, mashed to a paste
    2 1/2 tablespoons olive oil
    1/2 tablespoon red wine vinegar
    1 teaspoon dill weed


Tips

This is also great on bread, as a sandwich spread, a vegetable dip or on vegetables like fried eggplant or zucchini.


Directions

PLACE the yogurt into a sieve lined with cheese cloth and allow to drain for about 1 hour. You want the yogurt very, very thick.

FINELY chopped the cucumber. Salt it lightly and allow it to rest for 5-10 minutes. Squeeze the cucumber between pieces of paper towel to remove as much moisture as possible.

PLACE everything (yogurt, cucumber, etc) into a bowl and stir until all the ingredients are blended and the oil has emulsified into the yogurt

TRANSFER the mixture to a sealed container and refrigerate at least 2-3 hours before using to allow the flavors meld.
