Low-Fat Blue Cheese Dressing, per tbls.

Introduction

Made with cottage cheese, this dressing offers lots of flavor with minimal fat. And unlike commercially-prepared low-fat dressing, it's not loaded with chemicals. Made with cottage cheese, this dressing offers lots of flavor with minimal fat. And unlike commercially-prepared low-fat dressing, it's not loaded with chemicals.
Number of Servings: 40

Ingredients

    2 cups of cottage cheese (I use fat-free)
    1 cup (4 oz.) of crumbled blue cheese
    1/4 tsp. salt
    1/2 tsp. garlic powder
    1/2 tsp. ground mustard
    1/2 tsp. black pepper

Tips

Next time, I will use a little less black pepper and a little more salt.

I use a VitaMix and mix on high. It takes a few moments for the cottage cheese to liquefy. Be patient - it will, and then it will blend freely.


Directions

Put HALF the blue cheese and all of the remaining ingredients in a blender; blend until smooth. Pour into a bowl and mix in the remaining blue cheese. That's it.

Serving Size: Serving size: 1 tblsp; makes 40 serrvings
