A quick and filling lunch! A quick and filling lunch!

Ingredients

    1 whole wheat pita
    3 Tablepsoons hummus
    1/4 cup zucchini, chopped
    1/4 cup fresh spinach

Directions

Spread hummus inside pita and pop into the microwave to warm (about 15 seconds). Stuff with zucchini and spinach - as much as you can fit in there!

if you don't care whether or not the pita/hummus is warm, this is great picnic food or a great snack to carry with you if you have a small, insulated lunch sack.
