Exotec's Roasted Veggies

Ingredients

    one bag of mini/microwavable carrots
    1 lg pkg button mushrooms
    1 baking (white) potato
    1 sweet potato
    1-2 broccoli stems
    1 c green beans
    6 T coconut oil
    3 T nutritional yeast
    3 T Butter Buds™
    1 T onion powder
    2 T parsley flakes

Directions

Peel broccoli stems and cut into 1/2" cubes
Peel potatoes and cut into 1/2" cubes
Separate mushroom stems and caps, and quarter the caps
Add all veggies to a large plastic zipper bag
Add seasonings
Pour oil over all
Close the bag, removing all the air you can
Squish/mix everything together
Turn a couple times over the next hour or so, mixing each turn

Roast veggies in a single layer on a baking sheet or low-sided pan at 350°F until they're cooked through - stirring and flipping over a couple times.
