Ingredients

    -.5lb shrimp peeled and deveined
    -1 can white kidney beans rinsed and drained
    -1 med shallot chopped
    -1 garlic clove smashed
    -.25 c white wine
    -2 big handfuls baby spinach
    -2 Tbsp olive oil
    - 1 pad of butter
    -1 tsp garlic powder
    -2 Tbsp dijon mustard
    -salt and pepper to taste

Directions

heat olive oil and butter in a pan over med heat.
add shallot and garlic cook until soft. about 3 min.
add beans and spinach and wine. cook untill spinach wilts.
add shrimp, garlic powder, salt and pepper. continue cooking untill shrimp are cooked through. about 4 min.
finish stirring in dijon mustard
serve

Serving Size: makes 4 3/4-cup servings
