Tuscan Herb Roasted Veggies

Ingredients

    8 medium Red Potatos
    Zucchini, 1 cup, sliced
    yellow crookneck squash, 1 cup sliced
    Peppers, sweet, red, raw, sliced, 1 cup
    Onions, raw, 1 cup, chopped
    Borden Medleys Tuscan Herb, 1.75 cup
    2 Tbsp olive oil

Directions

mix all veggies with olive oil and place in shallow baking pan to bake at 425 F for 40 min or untill tender.
mix cheese and herbs as directed on pkg and sprinkle on top of veggies, place in oven again if needed to melt cheese.
