1/2 stick of butter 1/2 chopped bell pepper 1/2 chopped onion 2 cloves garlic 1 med. tomato 2 yellow squash 2 zucchini 1/2 tsp. salt 1/2 lb. lean ground beef 1/2 lb. lean ground turkey 1/2 cup grated parmesan cheese 1/2 cup Italian bread crumbs
Brown ground beef and turkey together and drain. In a seperate pan saute' chopped onion, bell pepper, and garlic in butter. Add chopped tomatoes, zucchini, squash, salt, red pepper, and basil. Cook uncovered until almost all water is cooded out-approx. 30 minutes. Take off heat and stir in browned and drained hamberger/turkey mixture, cheese, and bread crumbs. Pour into casserole dish. To with extra cheese and bread crumbs about 1/4 cup of each. Bake at 350 degrees for about 15 minutes or until top begins to brown.
