Amy's Baked Beef Burittos

Number of Servings: 6

Ingredients

    1 pound of lean beef
    1 15 oz of kidney beans (rinsed)
    1 15 oz can diced tomatoes- chili style
    I cup chopped onion
    1 cup chopped red sweet pepper
    1 tbs olive oil
    1 packet of Ortega (or the like) chili powder
    1 cup of water
    6 flour tortillas
    .5 cup of mexican shredded cheese

Tips

Dollop sour cream on top before serving.


Directions

Preheat oven at 400- get a casserole dish
sautee onions and peppers in olive oil- set aside
brown beef
add beans
add tomatoes
add Ortega powder in water
add onions and peppers
heat all together

With slotted spoon scoop a large spoonful of the mixture into tortilla and roll and place in casserolle dish. Six should fit. Top with cheese and bake in oven of for 15 minutes
