Quinoa with Paprika Chicken and Green Beans

Introduction

Ingredients

    * 1 pound chicken breast, cut into thin strips
    * salt to taste plus 1 tsp
    * 2 Tbsp plus 1 tsp lemon juice
    * 1 tsp smoked paprika
    * 1.5 cups quinoa
    * 2 Tbsp olive oil, divided
    * 5 cloves garlic, divided
    * 3 cups water
    * 8 oz mushrooms, sliced
    * 12 oz green beans, cut into 2-3" sections
    * Bunch of fresh basil, julienned

Tips

Remember: Garlic goes from being aromatic to being burnt quickly, so keep an eye on it.

Directions

1. In a bowl, marinate chicken with salt, 1 tsp lemon juice, and paprika. Set aside.

2. In a pot, heat 1 Tbsp olive oil and add 2 cloves pressed garlic. Cook until just aromatic and add quinoa and 1 tsp salt. Cook 1-2 minutes until lightly toasted. Add water, bring to boil. Reduce heat and simmer covered for 20 minutes or until cooked through.

3. In a cast iron skillet, heat 1 Tbsp olive oil and add mushrooms in a single layer. Cook until lightly browned on each side and remove.

4. In the same cast iron skillet, heat 1 Tbsp olive oil and add chicken in a single layer. Cook until lightly browned on each side and remove.

5. In the same cast iron skillet, add green beans and cook until al dente. Add a little more oil if necessary. When the beans are almost cooked, add 3 cloves pressed garlic and cook until aromatic. Do not let the garlic burn.

6. In a large bowl combine quinoa, chicken, green beans and mushrooms. Add fresh basil and 1-2 Tbsp lemon juice and mix well. Serve and enjoy.
