6 cups water
1 pound boneless, skinless chicken breast, chopped into small pieces
6 tsp. Bear Creek Chicken Base
2 cups portabello mushrooms, cut into small-ish pieces
1 cup grape tomatoes, cut in half
1 Tbsp olive oil
1-1.5 cups raw onion, chopped
2 cloves garlic, chopped fine
2 green onions, chopped
2 cups frozen peas
1 7 oz. bag La Moderna pasta, star-shaped)
Dried basil and other seasonings to taste
In meantime, heat olive oil in small pan. Add garlic and onions (not green onions) and saute for 2 minutes.
Once broth is boiling, add mushrooms, tomatoes, green onions, peas, and sauteed garlic and onions. Add dried basil and other seasonings to taste. Stir and bring back to a boil.
Add chicken and pasta. Return to boil, stirring often. Boil for 1 minute, then lower to simmer. over, and cook for 11 more minutes, stirring occasionally.
